Blueberry Coffee Cake



This is another outta my head creation. It's good enough to make again.

2 heaping cups bisquick
1/2 c. sugar
1 egg
1/2 c oil
1 and 1/2 to 2 cups buttermilk
about a cup of blueberries maybe more, definitely not less.

stir with fork.
place in cake pan or whatever with non stick spray already applied.

cover with a mixture of sugar and chopped pecans. Bake at 350 until knife comes out clean.

It was sooooooo yummy.

It's a pretty far trip from Cali. but if you really want it, whips up real fast!

NOOO Coffee doesn't know shes won yet... she hasnt' checked my blog or her own comments for that matter, lmao. Can't wait to see what she says when she realizes she won, lol.
That blueberry coffee cake looks mega yummy. I usually make something similar that my mom used to make-- a blueberry buckle. YUMMMY! I'll have to send you that recipe.. its topped with cinnamon/sugar/butter drizzle

This is Tigger speaking: I absolutely love blueberries so this desert made my day sunny and yummy ^_^. What's so funny about my grandma making this desert is that she had bought some blueberry bagels for our breakfast, and everytime we would toast the bagels the whole house smelled heavenly of blueberries. So my grandma after sniffing the kitchen to death decided to ease her craving by making a blueberry cake lol. Its now three days after we have gobbled the blueberry yumminess and my grandma is now in the kitchen making another blueberry cake hahaha I guess temptation is strong in this family....and big pants lmao!
